Dawadawa (also known as Iru) is a product made from carob beans. Fermented locust beans are a common traditional condiment in Nigeria and other West African countries.
Dawadawa (Iru) is used to flavour stews, sauces and other dishes such as rice, salads, and goes well with meat and fish etc. It was one of the main spices used in West Africa before bouillon cubes and is still a great alternative to bouillon cubes due to its nutritional and health benefits. It has a strong flavour and pungent aroma that is not particularly appealing, but in a sauce or stew its unmistakable earthy flavour brings out the flavour.
